Take the butter out of the fridge an hour before making the dough, preheat the oven to 200 degrees C, separate 1 mandarin into segments, removing the white membranes if possible. If you don't want to do this, it's not necessary - it doesn't affect the taste. Place the segments of 1 mandarin on a cutting board or table and let them dry.
- Butter: 50 g
- Tangerines: 3 pieces

Cream softened butter with 60 g of sugar, add flour and mix. Pour in room temperature water, stirring until the flour lumps dissolve, then add vanilla sugar. The dough should have a consistency similar to thick sour cream. Gently fold in dried mandarin segments. Grate the zest of 1 orange and mix it into the dough.
- Butter: 50 g

- Wheat flour: 200 g
- Water: 70 ml
- Vanilla sugar: to taste

After that, add 1 tsp of baking powder for every 100 g of flour and mix. If the dough is too thick, add a little more milk or water to make it thinner. Pour the dough into a mold lined with parchment paper. Bake in a preheated oven at 200 degrees for 30 minutes.

While the pie is baking, mix the sour cream and the remaining 20 g of sugar in a deep bowl. Peel the remaining mandarins and separate them into segments.
- Sour cream 15%: 100 g

Check the readiness with a toothpick or knife by inserting it into the center of the pie - they should come out dry. Remove the pie from the mold by lifting it by the edges of the parchment and let it cool.

Spread cream made of sour cream and sugar on the warm pie, then arrange mandarin slices on top. Optionally, sprinkle cocoa using a sieve for even distribution over the pie. Serve chilled.
