Melt the butter and let it cool
- Butter: 37 g

Mix all dry ingredients in a bowl and sift (flour, cocoa, baking powder, soda, sugar)
- Wheat flour: 135 g
- Baking powder: 1 teaspoon
- Soda: 1 teaspoon
- Brown sugar: 150 g

Add an egg to the dry mixture and mix a little.

Add sour cream, 1/4 cup of water, and mix the mixture with a mixer until smooth.

Remove the cake and let it cool completely

Soak: Boil 1/2 cup of water, add 2 tbsp of sugar and coffee, stirring constantly, cook for 1-2 minutes max, pour in the cognac, stir and turn off. While the soak is hot, soak the cake.

Cream: whip mascarpone with powdered sugar. Cover the cake when it is completely cooled and soaked (allow at least an hour for soaking).

- Powdered sugar: 60 g

Cut the pears into thin slices

Place in boiling water, adding honey, sugar (1 tbsp), and cinnamon to the pears.

When everything is ready, carefully drain the water and place the pears on a paper towel. Then start decorating the cake. Do not wet the pears or try to squeeze them. Sprinkle the finished cake with cinnamon on top and put it in the refrigerator.
