Peel and cut 4 good ripe pears into pieces.

Chop 5 pieces of ginger in syrup finely.
- Pickled ginger: to taste

Peel the lime and squeeze out the juice.

Preheat the oven to 200ºC.

Sift the flour into a bowl and add 90g of sugar, salt, and ground ginger.
- Wheat flour: 225 g
- Sugar: 190 g
- Salt: pinch
- Ground ginger: 1 teaspoon

Cut cold unsalted butter into pieces and rub it into the flour mixture with your hands until you get a mixture that resembles fine crumbs.
- Butter: 115 g

To make the filling, boil water and 100g of sugar, then carefully add pieces of pear and poach for a couple of minutes.
- Water: 100 ml
- Sugar: 190 g

Add crushed ginger, lime zest, and juice to the pot and mix.
- Pickled ginger: to taste

Place the mixture in one large heatproof dish or four small ones.

Sprinkle the crumbs over the fruits, placing it high in the center of the dish and leaving space at the edge for the caramel to bubble.

Bake in a preheated oven for 25-30 minutes until the pears are cooked and the topping is golden.
