    Knead the dough well and knead it so that it doesn't stick to your hands, cover it with a towel, and let it rise for 30-40 minutes.

    Next, we move to the filling, boil the potatoes, then make puree, add fried onions, salt and pepper, and mix well. The filling is ready! We set it aside to cool.

    I will detail the last point! Now we heat the oven to 200 degrees, knead the dough again by hand (from this amount of dough I got two pies (one in a round shape and the other on a baking sheet) and 6 small pies depending on your shapes as they are all different). We divide the dough into 2 parts (like for 2 pies) and each part into halves again. Roll out the dough so that it fits perfectly on the form and edges. Place the filling inside, roll out the second part and place it on top of the filling. Pinch the edges together, make several holes with a fork and brush with egg yolk. Finally, put it in the oven and bake until golden brown.
