Kefir jelly

Kefir jelly is a light, refreshing dessert from European cuisine with a delicate texture and subtle aroma of vanilla and honey. This dessert is ideal for those watching their diet as it is based on low-fat kefir and requires little sugar. The combination of the fermented milk base and sweet notes makes it exquisite, while gelatin provides structure and a pleasant bounce. It is easy to prepare: the mixed ingredients are carefully combined with gelatin and chilled to a jelly-like state. It is especially delicious served with fruit puree, such as from currants or passion fruit—their light acidity perfectly complements the creamy base. This is an excellent choice for a summer treat or a healthy breakfast that can be made in advance.
