Autumn-style charlotte with plums is a cozy and aromatic dessert that perfectly conveys the atmosphere of the fall season. Its base is a tender airy dough filled with juicy plums, whose sweet-sour note harmonizes well with the warm aroma of cinnamon, vanilla sugar, and cloves. The roots of this pie trace back to European cuisine, where charlotte has long been valued for its simplicity and versatility. It makes a wonderful treat for family tea time or an addition to the festive table. Thanks to the plums, the pie remains moist and rich, while its ease of preparation makes it accessible even for beginners. Serve the charlotte warm with a light dusting of powdered sugar or a scoop of vanilla ice cream to highlight its delicate texture and rich flavor.

1
Preheat the oven. Wash the plums, cut them in half, and remove the pits.
- Plums: 400 g
2
Separate the egg whites from the yolks. Whip the egg whites into a foam, then gradually add sugar, yolks one by one, flour, and slaked soda. The dough should have a consistency similar to liquid sour cream.
- Chicken egg: 5 piece
- Sugar: 1 glass
- Wheat flour: 1 glass
3
Grease the baking tray with vegetable oil and pour half of the batter into it. Place the plums on top. To taste, I recommend adding cloves, cinnamon, and vanilla sugar, which will give the charlotte a special spiciness.
- Vegetable oil: 1 tablespoon

Pour in the remaining batter and place it in the preheated oven, keeping it at maximum temperature for 3 minutes, then bake for another 20-25 minutes at 140-180 degrees, depending on the oven.
