Lemon curd is a delicate, velvety cream with a rich citrus flavor that melts in your mouth. Its history traces back to European cuisine, where it became a symbol of sophistication and harmony of flavors. The sweetness of sugar balances the refreshing tartness of lemon, while butter gives the cream a silky texture. This dessert is perfect for filling tarts, pies, or as an addition to toast and croissants. Its rich flavor makes every morning a little brighter and every dessert unforgettable.

1
Beat the soft butter with sugar for about 2 minutes.
- Butter: 120 g
- Sugar: 200 g
2
Gradually add eggs and yolks, whisk for another minute.
- Chicken egg: 2 pieces
- Egg yolk: 2 pieces
3
Add lemon juice — the mixture may become lumpy, but this will pass with heating.
- Lemon juice: 150 ml
4
In a medium saucepan with a thick bottom, slowly heat the mixture until smooth, constantly stirring with a whisk.
5
When the mixture becomes smooth, increase the heat to medium and stir again until it thickens. Do not boil!
6
Remove the curd from the heat and add the zest. Transfer to a suitable dish and cover with plastic wrap to prevent a skin from forming while it cools.
- Lemon zest: 1 tablespoon
7
Put it in the fridge. When it cools down, it will be thicker.
