    Put flour and 1/3 tsp of salt in a bowl. Grate cold butter into it using a large grater. Mix it with the flour periodically to prevent clumping. Mix well and add 100 ml of cold water. Form the dough into a ball with your hands (do not knead for long). Place it in the refrigerator for 30 minutes or more.

    Preparing the filling. Peel the onion and chop it very finely. Remove the meat from the chicken thighs and chop it finely (do not remove the fat for a juicier samsa). From 700 g, I got about 500 g of chicken meat.

    Place onion, chicken meat, salt (I added 0.5 tsp), and pepper well in the container. Mix well.

    We are making samsa. Divide the dough in half and return one part to the fridge. Roll the second part into a thick sausage and cut it into 7 pieces. Flatten each piece of dough with your hands. Then roll it out into a thin circle with a diameter of about 12 cm (add flour if necessary).

    Place a large mound of filling in the center. Lift the two edges and seal them together. Lift the third edge and seal it as well. Press the corners well. Flip it over to form a pointed triangle. Then repeat the same for the rest of the dough. Place the prepared pieces on a baking sheet lined with parchment paper.

    Add a spoon of water to the yolk and mix. Grease the preparations. Optionally sprinkle a little sesame on top. Place in a preheated oven at 180 degrees. Bake for 40-50 minutes until lightly golden.
