Swedish oatmeal cookies (IKEA)

Swedish oatmeal cookies, known to many thanks to IKEA, are a crispy and aromatic treat that combines the delicacy of oats with the sweetness of chocolate. This recipe reflects Swedish baking traditions where simple ingredients turn into an exquisite dessert. Oats are ground to give the cookies a tender texture, while vanilla essence fills them with a subtle aroma. After cooling, the dough becomes denser, making the cookies especially crispy when baked. The finishing touch is a chocolate glaze that connects two halves into an elegant sandwich, creating harmony of taste and structure. Such cookies pair perfectly with a cup of fragrant coffee or tea, delighting with their delicate flavor and light sweetness. This treat embodies the coziness of a Swedish home and the simplicity of northern gastronomy.

1
Blend the oats in a blender for 30 seconds (important not to overdo it)
- Oat flakes: 200 g
2
Mix the dry ingredients: ground oats, flour, sugar, and salt.
- Oat flakes: 200 g
- Butter: 150 g
- Sugar: 300 g
- Salt: pinch
3
Melt butter or margarine and add to the dough.
- Butter: 150 g
4
Add an egg and a few drops of vanilla essence (can be replaced with vanilla sugar or vanilla. If using pure vanilla, use a pinch). Mix well.
- Chicken egg: 1 piece
- Vanilla essence: 0.3 teaspoon
5
At the end, add baking powder and mix well again.
- Baking powder: 0.3 teaspoon
6
Place the mixture in the refrigerator for at least 2 hours. If you're short on time, at least for 30 minutes.
7
Form balls from the dough on a baking sheet using a spoon (choose the size depending on whether you want small or large cookies). Do not place the balls too close to each other, or they will merge during baking.
8
Preheat the oven to 200 degrees. Bake for about 7 minutes. When the cookies turn golden and lighten in the center, it's time to take them out.
9
Cool the cookies on a rack. Do not remove them immediately, as they are still fragile right after baking.
10
Melt the chocolate.
- Chocolate: 300 g
11
Dip one side of the cookie and connect it with another.
