Separate the egg whites from the yolks. Whip them separately, adding 45 grams of sugar to each. Combine, mixing gently.
- Sugar: 150 g

Add the sifted flour gradually, not all at once! Also mix carefully — you will hear an 'airy' sound while mixing; it's important not to suppress it. Add chopped walnuts, cinnamon, nutmeg, and kefir.
- Wheat flour: 100 g
- Walnuts: 20 g
- Cinnamon: 1 teaspoon
- Nutmeg: pinch
- Kefir: 5 tablespoon

Place the dough in a piping bag and pipe out 4 round 'pillows'.

Place in an oven preheated to 190 degrees and bake for 10-15 minutes until golden brown.

Peel the pear, remove the seeds, and cut into small slices.

Place the remaining sugar (60 g) in the pan; when it is completely melted, add the pear - it should be fully covered with syrup.

Whip the cream at medium speed with powdered sugar and a thickener for cream - the cream will be ready in a couple of minutes.
- Cream 30%: 200 ml
- Powdered sugar: 30 g
- Cream thickener Dr.Oetker: 2 teaspoons

When the cushions cool down, use a piping bag to squeeze out the cream and place it in the refrigerator for 15 minutes.

The remaining syrup can be used for decoration. Apply thin sticks on parchment paper and place in the fridge; after 15 minutes, they can be removed — we will have caramel sticks for decoration.

Take out the cushions and place a couple of pear slices on top, decorate with caramel sticks and sprinkle with white chocolate.
