Blueberry pie with sour cream filling

6 servings

90 minutes

Blueberry pie with sour cream filling is a delicate and aromatic treat that combines a crispy base with a juicy berry filling. It features a fragile shortcrust pastry base topped with a sweet blueberry filling soaked in a creamy mixture of sour cream and eggs. This dessert originates from European cuisine and is especially popular in the summer season when berries are rich in flavor. Blueberries add a refreshing tartness balanced by the sweetness of the filling. This pie is perfect for cozy tea gatherings and can be served warm or chilled. Its simplicity in preparation and rich flavor profile earn it a deserving place among homemade desserts, providing delight with every bite.

Sift flour with salt into a mound on the table or in a food processor bowl. Add sugar. Place diced cold butter on top. Chop the flour with the butter until it resembles fine crumbs (using a knife or processor). Add one egg and possibly a bit of cold water, mixing the dough each time. It should form a thick, crumbly mixture (no need for uniformity). Gather the finished dough into a ball, wrap it in plastic wrap, and refrigerate for 1 hour.

Take the dough out of the fridge, roll it out a bit, and line the bottom and sides of the pie pan, forming edges. Cover the dough with a circle of parchment and place a dry weight (I use peas for this). Put the pan with the dough in a preheated oven at 190–200 degrees and bake for 10–12 minutes.

Sort, wash, and dry the blueberries. Mix half of the blueberries with 3 tablespoons of sugar. Place the blueberries mixed with sugar at the bottom of the baked dough, layer the remaining blueberries on top, and sprinkle another tablespoon of sugar over the berries.
