Quick cottage cheese pastries are a cozy and homemade treat from Russian cuisine. Their base is a delicate cottage cheese dough that doesn't require long kneading or resting. Thanks to kefir and baking powder, it turns out airy and soft, while the cottage cheese gives it a light creamy note. These pastries can be made with any filling—sweet or savory; they are perfect for family tea time or a quick snack. The crispy golden crust obtained from frying in vegetable oil makes them especially appetizing. The simplicity of preparation and accessible ingredients make this recipe a find for those who appreciate delicious homemade baked goods without extra hassle.

1
Pour kefir into a bowl, add baking powder, salt, sugar, egg, cottage cheese, mix everything thoroughly, add sifted flour and knead a soft sticky dough.

- Baking powder: 1 teaspoon
- Salt: 1 teaspoon
- Sugar: 1 tablespoon
- Chicken egg: 1 piece
- Cottage cheese: 250 g

Do not add flour! Cover the dough with a bowl and let it rest for 20-30 minutes for the gluten to swell. Prepare the filling as you wish.
3
Roll out the dough for pies on a floured surface to a thickness of 0.5–0.7 cm. Fry the pies in vegetable oil as usual.
