But fortune cookies are available in all Chinese restaurants in the USA. However, the main version does not exclude the following plot: poor Chinese workers involved in the construction of the transcontinental railroad did not have the opportunity to bake traditional mooncakes yuebing with bean and lotus filling during the Moon Festival (Zhongqiu - "mid-autumn"). Therefore, they began to bake cookies in the form of a folded moon.

It is necessary to prepare wishes in advance, written on narrow paper sheets according to the number of baked goods.

Whip the egg whites to stiff peaks.
- Egg white: 3 pieces

Mix flour, powdered sugar, salt, and essence separately, then gradually add to the egg whites while gently mixing.
- Wheat flour: 90 g
- Powdered sugar: 90 g
- Salt: to taste
- Vanilla essence: 0.5 teaspoon

Prepare 2 non-stick baking trays. Spoon the dough onto the first one, trying to make the cookies thin and in a neat round shape.

Place the baking tray in the oven for 5 minutes.

Remove the first sheet from the oven while the cookies are hot and use a wooden spatula to wrap a wish note inside. It's easy to wrap the cookie; just fold the circle in half and then in half again. Do the same with the second batch. The finished cookies will harden and become crispy as they cool.
