Marble meringues with mascarpone are an elegant combination of airy lightness and rich flavor. Preheat the oven to 140 degrees. Melt 50 grams of chocolate in a water bath. Let it cool.
- Dark chocolate 70%: 125 g

Whip the egg whites until fluffy foam forms. Add 1 tablespoon of sugar and whip to soft peaks. Then add another tablespoon of sugar, whipping it well with the egg whites. Whip for 5–7 minutes until stiff peaks form.
- Egg white: 3 pieces
- Sugar: 175 g

Carefully fold chocolate into the egg whites and create swirls to mimic a marble effect.
- Dark chocolate 70%: 125 g

Place the mixture in a star-shaped piping bag and pipe circles with a diameter of 5 cm onto baking sheets lined with parchment paper.

Bake for 40 minutes — the meringues should easily come off the parchment paper, which means they are ready. If not, leave them in the oven for a few more minutes.

Take out of the oven and cool.

Melt the remaining chocolate, let it cool slightly, then dip the bottom of each meringue in chocolate. Place back on parchment, on the side, to let the chocolate set.

Meanwhile, whip the mascarpone with powdered sugar and vanilla. Fill a pastry bag with the cream and join the two halves of the meringue with the cream.
- Mascarpone cheese: 100 g
- Powdered sugar: 1 g
