Gambovo Transcarpathian couple

Gambovtsy is a traditional Ukrainian dish from the depths of Transcarpathia. These airy, tender products are steamed, making them especially soft and aromatic. Historically, gambovtsy are a type of homemade steamed buns that housewives prepared for holidays. In this version, they are filled with halva and blueberries, creating a wonderful combination of sweetness and slight acidity. Their taste is complemented by crispy cookies with caramel notes that add special charm. Gambovtsy are served hot, drizzled with melted butter or honey with nuts, making them the perfect dessert for cozy family evenings.

Add yeast to warm milk. Pour the dissolved yeast, egg, sugar, and salt into the flour and mix. Cover and let it sit for 1.5 hours, stirring the dough a couple of times during this time.
- Yeast dough: 800 g
- Sugar: 100 g

While the dough is preparing, we grind the pre-dried bread in a blender. In a pan, we toast the breadcrumbs with butter. We add sugar to the breadcrumbs (I want to note that the breadcrumbs turned out very tasty, reminiscent of tubes)).
- Breadcrumbs: 100 g
- Butter: 50 g
- Sugar: 100 g

Our dough has risen, and we start dividing it into pieces of the desired size. From the formed balls, we stretch a flatbread and place the filling — halva and blueberries with sugar in the middle. We place them in a steamer, having previously greased the bottom of the buns with oil, and let them rest for 20 minutes.
- Halva: 200 g
- Blueberry: 200 g
- Sugar: 100 g

We steam for 20 minutes.

After cooking, place on a plate, brush with melted butter, and sprinkle with breadcrumbs mixed with sugar. Another option is to mix honey and walnuts ground in a blender. Ideally, it should be fully coated in breadcrumbs, but they didn't seem to stick well. ))
