Grate the orange zest, peel the oranges, and separate them into segments. I prefer to remove the membrane from each segment and then cut each segment into pieces, but you can leave them whole.

Mix the eggs with sugar in a bowl over a water bath. Add the swollen semolina with kefir to the eggs and mix. Add the zest.
