Preheat the oven to 180 degrees.

To make caramel, heat a pan over medium heat, add sugar, and spread it evenly with a spoon. Cook without stirring until the bottom layer starts to melt. When this happens, mix the top layer with the melted caramel. Wait for all the sugar to dissolve, remove from heat, and quickly stir in warm butter. Pour the caramel onto a baking sheet lined with parchment paper. Let the caramel spread on the paper by gently lifting the edges. Leave the caramel to set for 10 minutes, then chop it with a knife. Place the resulting pieces at the bottom of a greased 15x15 cm fireproof dish. The caramel should completely cover the bottom of the dish.

Peel the nectarines and remove the pits. Cut them into large wedges. Place the wedges on top of the caramel, skin side down.

Pre-thaw the puff pastry sheet, cut it in half, and place one half in the freezer until use. Roll out the other half on a floured surface into a square with sides of 19 cm. Cover the nectarines with the pastry, folding the edges inward into the form. Prick the pastry with a fork all over its surface to release air.

Send to the oven for 30 minutes, then remove and let cool for 10 minutes. Flip the tart onto a plate and serve with a scoop of your favorite ice cream.
