Oatmeal cookies with chocolate and almonds are a cozy dessert with a crunchy texture, rich chocolate flavor, and delicate almond aroma. Its roots trace back to American cuisine, where oatmeal cookies became a classic due to their simplicity and nutrition. A light citrus hint of lemon and warm spice of cinnamon give it a unique character. The cookies pair perfectly with a cup of coffee or warm milk, while their golden crust and melted chocolate pieces turn each treat into a moment of delight. Thanks to the number one oats, they hold their shape, and the almond flakes add elegance. The simplicity of preparation makes this dessert accessible even for novice cooks. It's an ideal option for home baking to delight yourself and loved ones.

1
Grate the lemon zest and squeeze the juice from half a lemon. Melt the butter in a pan over low heat. Add sugar, cinnamon, lemon zest, and juice. Let the sugar dissolve. Then turn off the heat.
- Lemon: 0.5 piece
- Butter: 80 g
- Sugar: 0.5 glass
- Ground cinnamon: 1 teaspoon
- Lemon: 0.5 piece
2
In a bowl, thoroughly mix the oats with the creamy mixture and vanilla sugar. It is VERY important to use large flakes No. 1, otherwise the dough will likely spread on the baking sheet!
- Oat flakes #1: 3 glasss
- Vanilla sugar: 1 teaspoon
3
Spread baking paper on the baking tray and spoon the oatmeal mixture onto it, shaping the future cookies to the desired form and size. But do not layer too thickly - the center is unlikely to bake.
4
Break the chocolate bar into small pieces with a knife. Press 4-5 pieces of chocolate into the cookie dough, sprinkle with almond flakes, and press them down too, so nothing falls off when you remove them.
- Dark chocolate: 50 g
- Almond flakes: to taste
5
Place in a preheated oven at 190 degrees in the middle. Cook on the top heat for about 10 minutes until the chocolate pieces melt.
6
Or, if you have an old gas stove like mine, place the tray on the top shelf and bake for about 15 minutes (the cookies are unlikely to brown on top and the chocolate will remain a bit angular).
7
Take out of the oven, let it cool a bit. Place it on the prettiest plate and enjoy). Good luck!
