Clean the leek from old leaves, cut off the roots and the dark green part. Cut it in half lengthwise, then slice thinly - it should yield about 5 cups. Rinse and dry.

Melt butter with olive oil in a deep skillet over medium heat. Add leeks and lightly salt. Cook, stirring, for 5 minutes. Then reduce heat, cover, and cook, stirring to prevent burning, until soft, about 15 minutes. Stir in thyme.
- Butter: 1 tablespoon
- Extra virgin olive oil: 2 tablespoons
- Leek: 3 pieces
- Coarse salt: to taste
- Chopped fresh thyme: 1 teaspoon

Roll out the dough into a rectangle of 15x35 cm. Place it on a parchment-lined baking sheet and create low edges (you can place the dough directly in a form with edges). Brush the dough lightly with beaten egg and water, and sprinkle with parmesan. Refrigerate for 30 minutes.
- Yeast puff pastry: 500 g
- Water: 1 tablespoon
- Chicken egg: 1 piece
- Grated Parmesan cheese: 30 g

Preheat the oven to 190 degrees.

Bake the dough for 10-15 minutes until light golden. Remove and gently press the center. Top with leeks and sprinkle with olives. Bake for another 10 minutes.

- Pitted olives: 0.3 glass

Remove from the oven and place pieces of soft cheese on top. Let it cool slightly and cut. Serve warm.
