Peel boiled or baked beetroot, grate it on a fine grater, add minced garlic (optional: add walnuts), mix with sour cream, and salt to taste. Chill.

Mash the cheese with a fork, add chopped herbs and garlic, and mix the mass well.
- Feta cheese: 250 g
- Parsley: 1 bunch

Form round patties from potato dough with wet hands (this is important — the dough will be sticky, so hands need to be moistened with water!), place a spoonful of filling on each, pinch the edges, coat in breadcrumbs or flour, and fry in heated vegetable oil on both sides until golden brown.
