Pour the milk into a small saucepan, add cream and vanillin, and bring to a boil. Remove from heat and let cool slightly. Whisk the egg yolks with sugar in a warm water bath. Gradually pour in the milk with cream and stir for about 2-3 minutes. Let cool.
- Milk: 250 ml
- Dry cream: 250 g
- Vanillin: pinch
- Egg yolk: 5 piece
- Fine white sugar: 75 g

Whip egg whites with powdered sugar to a strong foam, place in small molds, and put in the microwave for 1-1.5 minutes at 90 W.
- Egg white: 6 pieces
- Powdered sugar: 3 tablespoons

Pour the vanilla sauce into plates, invert the soufflé on top. Drizzle with berry syrup and sprinkle with almonds.
