Pears in green tea is a refined dessert of Chinese cuisine that embodies deep aromas and harmonious flavors. It is based on juicy 'conference' pears simmered in a fragrant brew of jasmine tea, honey, and spices. Star anise and cinnamon give the fruit an exquisite Eastern sound, while lime zest and juice add a fresh citrus spark. The history of this recipe traces back to the tradition of Chinese monasteries where tea served not only as a drink but also as a base for delicate treats. Pears should be served chilled with a thick aromatic sauce that has soaked into their core. The dish perfectly concludes the meal, filling it with lightness and elegance.

1
Boil a liter of water in a saucepan, add sugar, 2 cinnamon sticks, star anise, honey, and the zest of two limes. Boil until the sugar dissolves, then immerse a tea bag in the liquid and steep the tea on low heat for three minutes. Discard the bag, add peeled pears to the water, and simmer on low heat for twenty minutes.

Remove the saucepan from the heat, take out the pears, and let them cool separately. This will take about two and a half hours. After that, they can be served in deep plates, cut into pieces, and drizzled with the sauce from the saucepan, which should be enhanced with lime juice for freshness.
