Prepare the necessary ingredients.

In a separate container, place 1 teaspoon of salt, 2 teaspoons of ground pepper mix, and ground coriander to taste.

- Mix of peppers: 2 teaspoons

Mix the spices well.

Peel the garlic, wash it well, and press it through a garlic press.

Wash the meat well under running water and dry it a little.
- Pork fillet: 1 kg

Make a shallow cut along the piece — about 1 cm deep.

Cut the meat, moving in a spiral towards the center of the piece.

The piece should be solid, about 1 cm wide.

Cut a piece into approximately two equal parts.

Pound each piece on both sides, covering with plastic wrap.

Rub the prepared meat with garlic and sprinkle with the prepared spices and salt.

Roll the meat into a roulade. Secure it with a tight string so it doesn't unravel while baking. Place it in a baking dish. Add 50 ml of clean water and place a bay leaf and allspice at the bottom. Let it marinate for 30 minutes at room temperature.
- Bay leaf: 2 pieces
- Allspice peas: 6 pieces

Cover the baking dish with a lid or foil, and bake in a preheated oven at 180 degrees for about 1 hour.

Cool the roll under a closed lid to keep it juicy. Remove the strings used to tie the roll. Serve warm or cold.
