Cherry dumplings are a traditional Russian dish infused with the spirit of home comfort. Their roots go back to Slavic cuisine, where such filled dough products have been popular for centuries. It is recommended to serve dumplings with a gentle cottage cheese cream that softens the brightness of the cherries and makes the dish truly exquisite. Thaw half of the fresh-frozen cherries (you can do this by moving them from the freezer to the fridge overnight).
- Frozen cherries: 200 g

Prepare the dough. For this, add flour to the mixer, then add olive oil, yolk, and salt.
- Wheat flour: 500 g
- Egg yolk: 400 g
- Olive oil: 20 ml
- Salt: 6 g

Mix all the ingredients and start kneading the dough, gradually adding cold water. The dough should be firm, solid, smooth, and not stick to your hands.
- Water: to taste

Roll the dough into a sheet no thicker than 1.5 mm. Cut out circles using a glass.

Place 3 frozen cherries in the center of each circle. Grease the edges with egg yolk and seal.
- Egg yolk: 400 g
- Frozen cherries: 200 g

Boil the dumplings in salted boiling water for 5 minutes.
- Salt: 6 g

Prepare the sauce. To do this, place thawed cherries in a saucepan, sprinkle with powdered sugar, mix and cook on low heat for 10 minutes, stirring.
- Powdered sugar: 40 g
- Frozen cherries: 200 g

Mix the cream and cottage cheese, then strain everything through a sieve.
- Cottage cheese 9%: 400 g
- Cream 33%: 30 ml

Place the dumplings, cherry sauce, and cottage cheese with cream on the plate.
