Mix tonic with gin in a bowl. Pour half of the mixture into a pot, add sugar, lemon zest, and juice of 2 lemons. Bring to a boil, stirring until the sugar dissolves. Let it cool slightly. Pour in the remaining tonic mixture. Transfer to a low freezer container with a capacity of 850 milliliters.
- Gin: 100 ml
- Tonic: 450 ml
- Sugar: 75 g
- Lemon: 2 pieces

Freeze until the mixture hardens at the edges but remains liquid in the center. Fluff with a fork and freeze for another 2 hours until firm.
