Carefully sort the strawberries to avoid crushing the berries, removing stems, leaves, and unripe berries.

Prepare the syrup, remove from heat, and carefully dip the berries into the syrup. Gently shake the basin to submerge the berries, put it back on the heat, bring to a boil, skim off the foam, and cook on low heat until ready.
