Cheesy breadsticks are a fragrant treat that comes to us from sunny Italy. Their roots trace back to traditional bread products that accompany Mediterranean dishes. Crispy on the outside and soft on the inside, they are infused with butter and the rich flavor of pecorino romano cheese. The yeast dough, mixed with milk and herbs, gains a subtle spiciness from thyme. These sticks are perfect as an appetizer for wine, cheese, or thick soups. Mix slightly warm milk (3 tbsp) with yeast and set aside for 10 minutes.
- Milk: 300 ml
- Dry yeast: 20 g

In a deep bowl, add flour, salt, and grated pecorino cheese.
- Wheat flour: 750 g
- Salt: 20 g
- Grated Pecorino Romano cheese: 100 g

Rub room temperature butter into the flour mixture, then add yeast and knead the dough, gradually adding the remaining milk.
- Salted butter: 100 g
- Dry yeast: 20 g
- Milk: 300 ml

Place the dough on a floured surface and knead for 10 minutes until it is soft and elastic.

Grease the bowl and the dough with olive oil, cover with plastic wrap, and place in a warm place for an hour.
- Olive oil: 1 tablespoon

Then knead the dough.

Pinching off pieces, roll into sausages the length of the baking tray and 1.5 cm thick.

Place the sticks on a parchment-lined baking tray at some distance from each other, sprinkle with crushed thyme leaves, and let sit for another 15 minutes. You can have several trays; you can bake 2 at once.
- Thyme leaves: 7 g

Place in a preheated oven at 220°C for 15 minutes.
