Add 10 grams of sugar to the mixture of milk and yeast, then transfer it to a bowl if kneading the dough with a mixer, and add another 40 grams of sugar during the kneading process.

Next, add 600 g of flour and 3 eggs. Then add 150 g of softened butter with a fat content of 82.5%. Finally, add 20 g of salt.

Knead the dough in a mixer for 20 minutes on low speed. If working by hand, the first kneading should be done within five minutes.

After the first kneading, leave the dough covered with a towel at room temperature for 20 minutes to rise. Then knead it well again and let it rest for another 20 minutes. After that, knead it a third time.

Prepare the filling: mix poppy seeds and 400 g of sugar and cook for 6 hours. Then pass through a meat grinder 3 times.
