Spinach soup with greens is the embodiment of lightness and freshness in French cuisine. This delicate soup has a subtle aroma of herbs that combines the rich taste of spinach, the spiciness of cilantro, and the freshness of parsley. Potatoes add creaminess and nutrition to the dish, while vinegar adds a tangy zest. Thanks to quick cooking, the greens retain their brightness and beneficial properties. This soup is perfect for a light lunch or dinner, especially in warm weather when you crave something refreshing. In France, such soups are valued for their naturalness and refined taste as well as for their simplicity in preparation. Bay leaves and black pepper add subtle spicy notes, making the flavor rich yet balanced. An ideal dish for those who love simplicity and harmony in taste!
