Preheat the oven to 180 degrees.

Remove the outer skin from the garlic head, keeping it whole. Wrap in foil and place on a baking sheet. Send to the oven for 1 hour until the garlic is soft. Cool for 10 minutes, then squeeze the flesh from the cloves into a small pot.

Add tomato sauce, finely chopped onion, maple syrup, vinegar, Worcestershire sauce, coriander, allspice, cloves, vanilla, and very finely chopped chili peppers. Bring to a boil, reduce heat, and simmer for 20 minutes, stirring.
- Tomato sauce: 1.5 glass
- Onion: 240 g
- Maple syrup: 100 ml
- Rice vinegar: 0.3 glass
- Worcestershire sauce: 2 tablespoons
- Ground coriander: 0.5 teaspoon
- Ground cloves: 0.3 teaspoon
- Vanilla extract: 0.3 teaspoon
- Ground allspice: 0.3 teaspoon
- Canned Chipotle Peppers: 2 pieces

Strain the sauce through a sieve and pour it into a jar. Store in the refrigerator.
