Prepare the ingredients. They all should be the same, at room temperature.

Crack the egg into a deep container.
- Chicken egg: 1 piece

Add mustard.
- Dijon mustard: 1 teaspoon

Pour in the wine vinegar.
- Wine vinegar: 1 teaspoon

Then add sumac.
- Sumac: 0.5 teaspoon

- Sea salt: 0.5 teaspoon

- Ground black pepper: pinch

Pour both types of olive oil.
- Refined olive oil: 100 ml
- Extra virgin olive oil: 30 ml

Whip intensively with an immersion blender.
