A classic of the Soviet snack table, a harmonious combination of sour, salty, bland and sweet, held together with a mayonnaise handshake. The main trick here is precisely in the use of mayonnaise, it should be everywhere, but nowhere at the same time . This is not a mayonnaise salad, but a salad with mayonnaise. They made up jokes about herring under a fur coat, but, despite everything, they continued to eat it. The classic Soviet recipe used fatty lightly salted Iwashi herring, which is now hard to find . Therefore, you can take regular barrel herring or salt fresh herring yourself.

Peel half a kilo of potatoes and half a kilo of carrots, boil in salted water until cooked, cool, and cut into small neat cubes.
- Potato: 500 g
- Carrot: 500 g

Boil the beet until cooked or use pre-cooked ones sold in stores; grate the beet on a medium grater.

Peel two large apples, remove the seeds and other insides, and cut them into small neat cubes.

Remove any bones from the herring fillet, if they remain after factory processing, and cut it into small neat cubes.

Boil four large eggs hard, cool them down, peel the shells, and grate them on a medium grater.

Mix all components separately with a small amount of mayonnaise, season with salt and pepper to taste.
- Mayonnaise: 200 g
- Salt: to taste
- Ground black pepper: to taste

Layer the ingredients - first potatoes with mayonnaise, then carrots with mayonnaise, then apples with mayonnaise, then eggs with mayonnaise, then herring, and finally beets with mayonnaise. Let it sit in the refrigerator for an hour and serve with chopped green onions.
