Boil the chicken fillet. While it cools, we prepare the dressing.
- Chicken fillet: 125 g

Place all the ingredients (apple puree, juice, vinegar, mustard, salt, pepper, thyme, rosemary) in a blender and blend until smooth.
- Applesauce: 2 tablespoons
- Apple juice: 0.3 glass
- Apple cider vinegar: 2 tablespoons
- Dijon mustard: 1 tablespoon
- Salt: to taste
- Ground black pepper: to taste
- Thyme: 1 tablespoon
- Freshly chopped rosemary: 1 teaspoon

Mix chicken, mushrooms, feta, finely chopped mint and parsley in a salad bowl. Dress with sauce and mix.
- Chicken fillet: 125 g
- Champignons: 4 pieces
- Feta cheese: 40 g
- Fresh mint: 2 tablespoons
- Chopped parsley: 0.3 glass

Place spinach at the bottom of the plate, then add the prepared salad on top. Garnish with apple slices and serve. You can sprinkle chopped nuts on top.
