In a small bowl, whisk together oil, vinegar, mustard, sugar, salt, and pepper.
- Extra virgin olive oil: 60 ml
- Cider vinegar: 1 tablespoon
- English mustard: 0.5 teaspoon
- Sugar: pinch

- Ground black pepper: to taste

Peel a couple of medium beets, cut them into 4 pieces, then slice each quarter thinly. Cut the apples into 4 pieces as well, remove the core and slice thinly.
