Soak the peas in cold water for about an hour.
- Peas: 400 g

Wash the mint and separate the leaves. Remove the pits from the dates. Mix the mint leaves, dates, lemon zest, and juice of 1/2 lemon, and blend until smooth. Dilute with water to a consistency of liquid sour cream.
- Fresh mint: 50 g
- Dates: 5 piece
- Lemon: 1 piece

- Romaine lettuce: 1 bunch

Drain the peas, mix them with pumpkin seeds, and dress with mint sauce.
