If you cook "Stolichny" in its most minimalist form, it will be a finely chopped mixture of boiled potatoes, boiled chicken legs, pickles, boiled egg, raw onion and green peas with a generous mayonnaise dressing . In other words, a chicken version of Olivier in its usual Soviet version, and this modified recipe has a clear logic: chicken for a Soviet person was not such a scarce item as doctor's sausage or decent beef. Hence the status : if Olivier was cooked on major holidays, then "Stolichny" was suitable for weekdays, including public catering. The author of the recipe is considered to be Ivan Mikhailovich Ivanov, chef of the restaurant "Moskva", so the name of the salad is not taken out of thin air.

Place the chicken in boiling water, add salt, bay leaf, a few peppercorns, and an onion. Boil for about an hour until the meat is cooked. The resulting broth can be strained and used for other dishes.

Peel the potatoes and cut them into small cubes about 7 mm on each side.

Boil potatoes and carrots in salted boiling water until cooked. They should be boiled separately. Cooking time is 5-7 minutes. Let the cooked vegetables cool.

Boil eggs hard. To do this, bring water to a boil and carefully place the eggs in it with a spoon. Boil for 11 minutes, then pour cold water to stop the cooking. The yolk of eggs cooked this way will remain bright yellow.
