Zaalouk Eggplant Caviar

Zaalouk is a Moroccan eggplant salad, similar in meaning to eggplant caviar. It is also prepared in Arab countries. Unlike eggplant caviar, there are no onions or carrots here - only eggplants and tomatoes, as well as cilantro, cumin and paprika. So the taste of the eggplants is not interrupted by anything, and the tomatoes only emphasize it.

Prepare the necessary ingredients.

Peel the eggplants with a vegetable peeler or knife in vertical strips. This way they will mash better, but the remaining skin will provide the necessary flavor.
- Eggplants: 2 pieces

Cut the eggplants into large cubes.
- Eggplants: 2 pieces

Cut the tomatoes into the same cubes.
- Tomatoes: 500 g

Chop the garlic.
- Garlic: 2 cloves

Pour olive oil into the heated pan.
- Olive oil: 30 ml

Add vegetables, garlic, and spices, cover with a lid, and cook on low heat for 25 minutes.
- Garlic: 2 cloves
- Paprika: 1 teaspoon
- Ground cumin (zira): 1 teaspoon
- Salt: 1 teaspoon

Remove the lid, mash the vegetables with a spatula until smooth puree, evaporate excess liquid and remove from heat.

Add lemon juice to taste and chopped cilantro, mix well.
