Pea pancakes with feta and herbs are a light yet nutritious dish of European cuisine. Their roots trace back to traditional recipes where the combination of vegetables, cheese, and greens creates a harmony of flavors. The tender texture of the batter made with milk and eggs is beautifully complemented by the sweet notes of peas and the salty-creamy taste of feta. Shallots and fresh herbs add freshness and aroma, while the crispy golden crust makes them particularly appetizing. These pancakes are perfect as an appetizer or light dinner, especially when paired with sautéed tomatoes and sea salt that enhances the richness of flavor. Serve them warm and enjoy every bite!
