Line a baking sheet with aluminum foil. Pat the chicken wings dry with paper towels. In a vacuum bag, mix the wings with baking powder and 1 teaspoon of salt until they are coated in flour and baking powder. Then, carefully lay the wings in a single layer on the baking sheet. Place the wings in the refrigerator uncovered overnight.

Preheat the oven to 200°C and place the rack in the middle position. Bake the wings for 20 minutes, then flip and continue baking until cooked and crispy, about 20 minutes.

Meanwhile, wash the strawberries and cut them in half. In a pot over medium heat, combine the strawberries, vinegar, minced garlic, ginger, and light brown sugar, and cook until the strawberries soften and release juice, about 10 minutes. Mash the strawberries with a wooden spatula and add the pepper, adobo sauce, onion powder, and cayenne pepper (1/8 or 1/4 teaspoon depending on desired spiciness). Season with salt.

Reduce the heat to low and cook, stirring occasionally, until the sauce thickens, about 5 minutes. If the sauce becomes too thick, add water or chicken broth to achieve the desired consistency. Blend until smooth. Set aside.

Cut the avocado in half and remove the pit. In a blender or food processor, blend the avocado, sour cream, blue cheese, lemon juice, and milk. Season with salt to taste. Mix well, transfer to a bowl, and set aside.
