Preparing schnitzels. Carefully pat the meat dry with paper towels. Pound each piece with a mallet. Salt it.
- Beef tenderloin: 1 kg

In a shallow bowl, place corn starch. In another bowl, beat an egg and 2/3 cup of buttermilk. In a third bowl, mix flour, 2 teaspoons of salt, paprika, black pepper, onion powder, dried garlic, baking powder, and cayenne pepper. Pour the remaining buttermilk into the third bowl and mix. The mixture should resemble wet sand.
- Cornstarch: 0.8 glass
- Chicken egg: 1 piece
- Buttermilk: 1 glass
- Wheat flour: 2.3 glasss
- Salt: 2 teaspoons
- Paprika: 2 teaspoons
- Freshly ground black pepper: 2 tablespoons

Dip the cutlet in starch. Lift it, shake off the excess starch, then dip it in the egg mixture, and then into a third bowl with flour and buttermilk. Shake off the excess flour and set aside. Repeat the procedure with the remaining cutlets.

Place a deep pan on high heat and pour in oil. Carefully take 1 chop and place it in the oil. The chop should be fully submerged in the oil. Fry for 2-4 minutes until golden brown. Place the cooked chop on a plate lined with paper towels. Repeat the procedure with the remaining pieces of meat.

Preparing the sauce. Pour 1/4 cup of oil into a saucepan and heat over medium heat. Add flour, stir, and fry until the mixture turns light brown. Slowly pour in the milk. Add pepper and bring to a boil. Reduce heat, stirring constantly, and cook for about 4 minutes until the mixture thickens. Remove from heat, season with salt and pepper to taste.
