We peel the potatoes. If the skin is very soft and thin, it can be left unpeeled. Cut into large pieces. Since we will fry the potatoes on a grill, the pieces should be sized so they don't stick together.

Boil the potatoes in salted water until half-cooked - they should be slightly (not fully) pierced with a fork.
