Soba with turkey and vegetables

3 servings

20 minutes

Soba with turkey and vegetables is a vibrant combination of Japanese cuisine and tender meat. Traditional buckwheat soba noodles, known for their health benefits and rich flavor, pair excellently with juicy turkey fillet and crunchy vegetables. This recipe is rooted in Japanese gastronomy, where the freshness of ingredients and balance of flavors play a key role. Light frying gives the dish an appetizing caramelization, while soy sauce adds zest. It's important to maintain the texture of the vegetables—they should remain slightly crunchy. This dish is perfect for a hearty dinner or a nutritious lunch. Soba with turkey can be served as a standalone dish or complemented with fresh herbs and sesame seeds, creating a layered flavor ensemble. Its lightness and richness make it an ideal choice for those who appreciate harmony in taste and health.

Cooking steps
  • 1

We put water to boil for the noodles.

  • 2

While the water is boiling, cut the turkey fillet into slices 5–6 cm long and 1–1.5 cm wide. It is preferable to cut along the fibers.

    Required ingredients:
    1. Turkey fillet300 g
  • 3

Cut all vegetables into strips of length (7–8 cm) and thinness (2–3 mm). It is advisable to use a sharp knife for this.

    Required ingredients:
    1. Sweet pepper1 piece
    2. Carrot1 piece
    3. Leek1 head
    4. Cucumbers1 piece

In a deep pan (wok can be used), heat the oil and sauté the onion, turkey meat (brown well on each side), then add the carrot, followed by the pepper, and then the cucumber. Sauté each vegetable for 1-2 minutes. It's important not to let the vegetables overcook and become mushy — it's better if they remain slightly firm in the finished dish (but just slightly) — catching the moment is key.

Add salt, pepper, and coriander to taste, mix, and remove the pan from the heat.

    Required ingredients:
    1. Dried cilantro (coriander) pinch
  • 6

Add the vermicelli to boiling water and cook until almost done (better to undercook slightly than overcook) - about 3 minutes (depends on the brand - I prefer Japanese). When the noodles are ready, remove them from the pot and immediately add them to the pan with vegetables (without rinsing).

Cook everything on medium heat for about 2 minutes, stirring. Season with soy sauce. The key is not to add too much sauce, as there is a risk of over-salting — soy sauce can be added to the finished dish individually if needed. Mix everything thoroughly and remove the pan from the heat.
