We put water to boil for the noodles.

While the water is boiling, cut the turkey fillet into slices 5–6 cm long and 1–1.5 cm wide. It is preferable to cut along the fibers.
- Turkey fillet: 300 g

Cut all vegetables into strips of length (7–8 cm) and thinness (2–3 mm). It is advisable to use a sharp knife for this.
- Sweet pepper: 1 piece
- Carrot: 1 piece
- Leek: 1 head
- Cucumbers: 1 piece

In a deep pan (wok can be used), heat the oil and sauté the onion, turkey meat (brown well on each side), then add the carrot, followed by the pepper, and then the cucumber. Sauté each vegetable for 1-2 minutes. It's important not to let the vegetables overcook and become mushy — it's better if they remain slightly firm in the finished dish (but just slightly) — catching the moment is key.
- Sunflower oil: 3 tablespoons
- Leek: 1 head
- Turkey fillet: 300 g
- Carrot: 1 piece
- Sweet pepper: 1 piece
- Cucumbers: 1 piece

Add salt, pepper, and coriander to taste, mix, and remove the pan from the heat.
- Dried cilantro (coriander): pinch

Add the vermicelli to boiling water and cook until almost done (better to undercook slightly than overcook) - about 3 minutes (depends on the brand - I prefer Japanese). When the noodles are ready, remove them from the pot and immediately add them to the pan with vegetables (without rinsing).
- Soba noodles: 250 g

Cook everything on medium heat for about 2 minutes, stirring. Season with soy sauce. The key is not to add too much sauce, as there is a risk of over-salting — soy sauce can be added to the finished dish individually if needed. Mix everything thoroughly and remove the pan from the heat.
