For the salsa, wash the greens and pluck the leaves. Place the greens, capers, anchovies, wine vinegar, and lemon zest in a blender and blend. Pour in 1/3 cup of olive oil and mix well. Season with salt and pepper to taste.
- Fresh mint: 70 g
- Chopped parsley: 0.5 glass
- Green basil: 0.3 glass
- Baby spinach: 0.3 glass
- Pickled capers: 1 tablespoon
- Anchovy fillet: 2 pieces
- Red wine vinegar: 1 tablespoon
- Lemon zest: 0.5 teaspoon
- Olive oil: 0.3 glass
- Salt: to taste
- Ground black pepper: to taste

Heat 2 teaspoons of olive oil in a pan. Cut the salmon fillet into 200-gram pieces and dry with a paper towel. Season well with salt and pepper and place in the hot pan, skin side down. Fry for 5 minutes. Flip the fish and fry for another 1-2 minutes or until cooked to your liking.
