Duck with apples, baked in a sleeve, is a dish infused with the aromas of traditional Russian cuisine. Baking in a sleeve preserves the meat's juiciness, allowing it to gently soak up a sweet-spicy marinade of honey, soy sauce, and lemon juice. Ginger adds a light spiciness while apples provide a refreshing tartness that harmoniously complements the rich flavor of duck meat. Historically, duck with apples was considered a festive dish that adorned family tables during celebrations. It pairs excellently with mashed potatoes and sauerkraut salad, creating a wholesome and cozy meal. Prepare the marinade: squeeze juice from the lemon, add soy sauce, honey, and balsamic.
- Lemon: 1 piece
- Dark soy sauce: 3 tablespoons
- Honey: 1 tablespoon
- Balsamic vinegar: 1 teaspoon

Mix everything well.

Wash the cleaned duck and dry it with a paper towel.

Rub salt and pepper inside and out, pour with marinade, and let it marinate overnight (I marinated for a day because the duck is village-raised and I was afraid it would be tough when baked)

Cut the apples in half, remove the core, and slice them into wedges.

Place apples in the duck's belly (I didn't secure them, the apples held well, didn't fall out).

Place the duck with apples in the prepared bag (baking sleeve)
- Duck: 1.5 kg
- Green apples: 2 pieces

and send to the oven at 180-200°C for one and a half hours (depends on the weight of the duck and your oven)

15 minutes before it's ready, cut the sleeve and brown the duck.
