Chop the onion, grate the carrot and cheese, cut the cherry tomatoes into wedges, and slice a few rings of shallot.

Fry onion and carrot in vegetable oil until cooked.

While the carrot and onion are frying, mix the grated potatoes and eggs, and add salt. This can be done very quickly in a blender.

After all layers are laid, the casserole can be covered with foil and sent to the oven for 40-50 minutes at 200 degrees.

After some time, when the casserole is ready, it should be taken out and placed on top of tomato slices, rosemary leaves, shallot rings, sprinkled with grated cheese, and left in the oven for another 10 minutes, preferably under the grill.
