Preheat the oven to 160 degrees. In a large bowl, mix parsley, half of the olive oil, minced garlic, zest, and black pepper. Transfer half of the mixture to another bowl. Add the remaining oil to the large bowl and mix well. Add chopped vegetables and mix well.
- Chopped parsley: 0.5 glass
- Olive oil: 2 tablespoons
- Garlic: 5 clove
- Ground black pepper: 0.5 teaspoon
- Lemon zest: 2 teaspoons

- New potatoes: 450 g
- Onion: 4 heads
- Carrot: 450 g

Rub the meat with the remaining mixture and place it on a baking tray. Arrange the vegetables around it, except for the zucchini, and bake for 1 hour and 45 minutes for medium doneness. Remove from the oven and cover the meat with foil. Let it rest for 15-20 minutes.

In the meantime, increase the temperature to 220 degrees. Add zucchini to the meat and vegetables, and return to the oven for 15-20 minutes.
