Grind coriander, fennel, and cumin in a coffee grinder. Transfer to a bowl and mix with salt and pepper. Rub the meat with olive oil, then coat with the spice mixture. Place the meat on a baking sheet and let it sit for 1 hour.
- Coriander seeds: 2 teaspoons
- Fennel seeds: 2 teaspoons
- Caraway seeds: 2 teaspoons
- Salt: 1 teaspoon
- Ground black pepper: 0.5 teaspoon
- Olive oil: 1 teaspoon
- Lamb cutlets on the bone: 680 g

Preheat the oven to 220 degrees. Roast the meat for about 25 minutes until the internal temperature reaches 55 degrees for medium doneness. Remove from the oven and let it rest for 10 minutes. Cut the meat between the bones into separate pieces and place 2 pieces on each plate. Serve with vegetables.
