Peel the garlic and cut it in half lengthwise. Place the garlic in a small pot, pour in olive oil, and set it on low heat for an hour to soften the garlic.

- Olive oil: 8 tablespoons

Peel the potatoes and cut them into small pieces. Place the potatoes in a steamer, sprinkle with a dessert spoon of salt, cover with a lid, and steam until soft, about 20-25 minutes.
- Potato: 900 g
- Salt: to taste

Remove the tubers, dry them. Chop with a mixer, mixing with half of the garlic oil. Mix thoroughly, pour in the remaining half of the garlic oil, and whip until a homogeneous mass is obtained. Add salt and pepper.
