Risotto with saffron

Saffron risotto is a dish that embodies the warmth and spice of Eastern flavors. While risotto is traditionally associated with Italian cuisine, this version enriched with the aroma of cumin, sumac, and allspice takes on a unique Russian flair. The bright golden hue of the rice comes from saffron, known as the spice of kings. Sun-dried tomatoes add a slight tanginess, while mayonnaise gives the dish tenderness. Juicy pork tenderloin sautéed with spices perfectly complements the texture of the rice. This dish not only pleases the eye but also whets the appetite with its blend of spicy and fresh notes. It is perfect for a cozy family dinner or a festive feast as its rich flavor can surprise and delight.
