Cut the pork into small cubes.

- Freshly ground black pepper: 1 teaspoon

Chop half an onion and send it to the blender.

Cut the fat into slices about 5 mm thick.

Soak the skewers in icy water for a minute.

Skewer the meat, alternating each piece with fat. Place in a suitable baking dish so that the meat does not touch the bottom.

Send to a preheated oven at 200 degrees.

After 15 minutes, turn the skewers and return them to the oven, reducing the temperature to 180 degrees.
